Loaded Cowboy Dip

This one always disappears first. Cream cheese + shredded cheese + Rotel + black beans + corn + taco seasoning + bacon bits. Serve with tortilla chips or sturdy corn chips.

Ingredients
  

  • 1 8 oz block cream cheese, softened
  • 1 cup shredded cheddar
  • 1 can Rotel drained
  • 1 cup black beans rinsed
  • 1 cup corn canned or frozen
  • ½ cup cooked bacon bits
  • 1 packet taco seasoning or 2 Tbsp homemade
  • Optional: jalapeños
  • Optional: cilantro

Method
 

  1. Preheat oven to 350°F.
  2. In a large bowl, mix cream cheese, cheddar, Rotel, beans, corn, bacon, and seasoning.
  3. Spread into a baking dish or cast-iron skillet.
  4. Bake 20 minutes until hot and bubbly.
  5. Serve with tortilla chips or corn scoops.

Make ahead and store in foil pans. Reheat over a grill or camp stove.
