Cook the Meat
- Heat your cast-iron skillet. Cook sausage/bacon until browned.
- Remove and set aside, leaving a little grease for flavor.
Cook the Potatoes
- Add potatoes/hash browns to the pan.
- Cook until crispy and golden.
- Add onions/peppers halfway through if using.
Add the Eggs
- Push potatoes to one side of the skillet.
- Crack eggs into the empty side and scramble.
- Season with salt + pepper.
- Mix everything together once eggs are mostly cooked.
Add Cheese
- Turn off heat. Stir in cheese until melted.
Build the Burritos
- Warm tortillas briefly over the skillet or fire grate.
- Spoon filling into each tortilla.
Roll tightly like this:
- Fold in sides
- Pull bottom over filling
- Roll upward to seal
- (Optional) Crisp Them
- Wrap in foil and place near the campfire coals for 3–5 minutes to toast and warm through.
