Campfire Breakfast Burritos

Burritos are an easy breakfast idea and perfect way to start your day of UTV riding. They are easily customizable for picky eaters in the group. The egg and sausage burrito filling and tortillas are all heated in one pan, making for easy clean up. If you go the extra step and crisp them at the end, it makes a delicious difference!

Trail Rider’s Tip

Make a few extra and wrap tightly—breakfast burritos stay warm for about an hour in the glovebox or center console of a UTV (especially if you wrap them in a kitchen towel). Perfect trail snack.

Ingredients
  

Proteins & Filling
  • 1 lb breakfast sausage or bacon or chopped ham
  • 8 eggs
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup diced potatoes or frozen hash browns
  • ½ cup onion diced (optional)
  • ½ cup bell pepper diced (optional)
Wrap & Extras
  • 6 large flour tortillas
  • Salsa or hot sauce
  • Foil for wrapping heavy-duty recommended
  • Salt & Pepper
  • Taco seasoning

Method
 

Cook the Meat
  1. Heat your cast-iron skillet. Cook sausage/bacon until browned.
  2. Remove and set aside, leaving a little grease for flavor.
Cook the Potatoes
  1. Add potatoes/hash browns to the pan.
  2. Cook until crispy and golden.
  3. Add onions/peppers halfway through if using.
Add the Eggs
  1. Push potatoes to one side of the skillet.
  2. Crack eggs into the empty side and scramble.
  3. Season with salt + pepper.
  4. Mix everything together once eggs are mostly cooked.
Add Cheese
  1. Turn off heat. Stir in cheese until melted.
Build the Burritos
  1. Warm tortillas briefly over the skillet or fire grate.
  2. Spoon filling into each tortilla.
Roll tightly like this:
  1. Fold in sides
  2. Pull bottom over filling
  3. Roll upward to seal
  4. (Optional) Crisp Them
  5. Wrap in foil and place near the campfire coals for 3–5 minutes to toast and warm through.

Camping Tips (These Make a Huge Difference!)

⭐ Make-Ahead Tip (Most Popular)

Cook everything at home, assemble burritos, wrap tightly in foil, and freeze.
At camp, toss in the fire or on a camp stove for 10–12 minutes.
Perfect for early trail departures.

⭐ Pack in a Cooler Efficiently

Store burritos in a gallon Ziploc. They stack flat and thaw evenly.
If you’re UTV trail riding, they stay cold well alongside drinks.

⭐ Want No Cleanup?

Use foil packet burritos:
Place filling on a tortilla sitting inside a large foil square, wrap, and warm directly in coals.
No pan needed at all.

⭐ Add-ins That Travel Well

  • Pre-cooked bacon
  • Canned diced green chiles
  • Rotel (drained)
  • Pre-shredded cheese
  • Salsa packets
  • Taco Bell breakfast sauce packets (camping gold!)

⭐ Keep Tortillas Soft

Cold tortillas crack.
Sit the sealed pack near the fire for 1–2 minutes to soften before building burritos.
