Method
- Cook the Beef & Onion
- In a deep skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain if needed.
- Add Remaining Ingredients
- Stir in the rice, chicken broth, tomato sauce, diced tomatoes with chilies, black beans, taco seasoning, salt, garlic powder, and black pepper. Mix well.
- Simmer
- Bring the mixture to a boil, stirring occasionally. Reduce heat, cover, and simmer for 20–25 minutes, stirring occasionally, until the rice is tender.
- Add the Cheese
- Sprinkle the shredded cheese over the top. Cover and cook for 5 minutes, or until the cheese is melted and bubbly.
- Serve
- Spoon into bowls and add your favorite toppings like tortilla chips, cilantro, sour cream, or avocado.
