  • 1 lb ground beef browned and drained
  • 1 sweet onion diced
  • 1 cup uncooked rice
  • 1 ½ cups chicken broth
  • 1 15 oz can tomato sauce
  • 1 10 oz can diced tomatoes with chilies
  • 1 can black beans drained and rinsed
  • 4 tbsp taco seasoning or 1 packet
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 2 cups shredded cheddar or Mexican blend cheese
Optional Toppings
  • Fresh cilantro
  • Sour cream
  • Avocado or guacamole
  • Tortilla chips

Method
 

Instructions
  1. Cook the Beef & Onion
  2. In a deep skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain if needed.
  3. Add Remaining Ingredients
  4. Stir in the rice, chicken broth, tomato sauce, diced tomatoes with chilies, black beans, taco seasoning, salt, garlic powder, and black pepper. Mix well.
  5. Simmer
  6. Bring the mixture to a boil, stirring occasionally. Reduce heat, cover, and simmer for 20–25 minutes, stirring occasionally, until the rice is tender.
  7. Add the Cheese
  8. Sprinkle the shredded cheese over the top. Cover and cook for 5 minutes, or until the cheese is melted and bubbly.
  9. Serve
  10. Spoon into bowls and add your favorite toppings like tortilla chips, cilantro, sour cream, or avocado.
